10 Minute Mediterranean Salad Bowls

This quick salad can double as a main or side dish for a healthy dinner. It's an easy way to add lots of flavor to any occasion. If you're looking for a plant based meal, simply use non-dairy cheese and either of the vegan Wundernuggets options, Minty Lentil or Tumeric Lentil, as a great source of protein. 

Ingredients:

  1. Shredded mixed cabbage, or mixed greens
  2. Tahini dressing
  3. Hummus
  4. Hot sauce
  5. Feta cheese
  6. Your choice of Wundernuggets

Mediterranean Salad Bowl with Wundernuggets

Method:

  • Get your favorite cute looking bowls out
  • Place the greens
  • Warm Wundernuggets in a toaster or conventional oven for 7-8 minutes, or until crunchy on the outside
  • Place the hot Wundernuggets on the greens
  • Serve with a dollop of hummus, tahini drizzle and feta cheese
  • For an added kick, drizzle your favorite hot sauce on top!
