Easy Indian Lentils - Packed with Plant Based Protein

Indian 'Daal' with Wunder Nuggets - Packed with Plant Based Protein and Veggies

This recipe will have you singing with the aromatic fenugreek seeds and the smell of turmeric. Daal is a traditional Indian soup that is both nutritious and delicious. With the addition of some tasty, vegan chicken nuggets, this soup a great way to create a plant based meal that is still rich in protein.

  1. Ghee
  2. 4 cloves of garlic 
  3. 1 tsp cumin seeds
  4. 8-10 whole black peppercorns
  5. Kosher salt to taste
  6. 1 tsp of turmeric powder
  7. ½ tsp of asafoetida
  8. Red lentils
  9. Minty Lentil or Turmeric Lentil Wunder Nuggets

Cooking method: 


  • Place a deep dish on medium heat
  • Add ghee
  • Add garlic and sauté until garlic is light brown, about 20-30 seconds
  • Add cumin seeds, whole black peppercorns, mix for another 30 seconds
  • Add turmeric powder, and asafoetida, and quickly move to the next step
  • Rinse and drain lentils (do this ahead of time, so that they are ready to go)
  • Add them to the pot 
  • Give it a stir
  • Add enough water to submerge the lentils with about 3 inches above the level of lentils
  • Cover the pot until it comes to a boil
  • Quickly remove the lid before the lentils boil over
  • Simmer until lentils are completely soft, about 15-20 minutes
  • Bake Turmeric Lentil OR Minty Lentil Wunder Nuggets in a toaster or conventional oven for 7-8 minutes until full warm

  • To serve:

  • Pour some cooked dal into a serving bowl
  • Garnish with cilantro
  • Add the Wunder Nuggets on top
