Easy Peasy Cheesy Vegan Quesadilla

EASY PEASY CHEESY VEGAN QUESADILLA

These quick, plant based quesadillas with a tasty addition of vegan protein are the perfect healthy snack for kids! 

 

All you need is:

  • Tortillas (flour or almond or wheat)
  • Vegan queso (we used Credo Foods vegan medium queso) - its SO good!
  • Turmeric Lentil Wundernuggets

Method:

  • Warm a griddle to medium heat
  • Bake Wundernuggets for 7-8 minutes in a toaster or conventional oven
  • Crumble them up in a bowl using a fork and knife 
  • Warm the tortilla on the griddle - optional, put some butter or oil on both sides for a better outer crunch
  • Spread the queso on one half 
  • Sprinkle the crumbled Wundernuggets 
  • Add some more queso on top
  • Fold over the other half of the tortilla
