On Fridays, I usually try and do a facebook live session. I love it, as it gives me an informal outlet and it's okay if I mess up or stumble for words or don't have my sentences right. Who cares! I don't have to post process much and I love hearing comments from people. It's pretty awesome.
Irish Cream and fruit go really well together!
My sweet neighbor dropped by and gave me this delicious smooth buttery goodness of homemade Irish Cream. Since then I have gotten creative and used it in my old fashioned, sipping it after meals, and just sometimes taking a shot before bedtime to send me to a nice smooth sleep (shh... it's okay. sleep is good ya know!). However, before it's all done, I wanted to combine that with a nice fruity mix and try something new. Surprisingly there are not any recipes that do that. Well, eureka! That means I just invented a new recipe - how cool :)

If you think about it, it's whiskey, cream and fruit - you would think there would be all kind of concoctions on the internet. Turns out, there aren't. So I am curious to see what other ideas you may have on creative alternatives to use Irish Cream. Share in a comment if you do have such recipes under your belt.
So I gathered up the fruits I had. I like the sweetness of gala apples, to pair with a tangy peach. Add to that some bananas for that mush and then corn flakes for the crunch, with some salty toasted pumpkin seeds and you have a winner!
I also like using ghee for this recipe as the nutty flavor goes well as compared to butter. One trick is to sprinkle some salt when the fruit is getting cooked, it breaks it down quicker and adds just a little more of a flavor dimension to the dish.

Ingredients: (makes 2-3 servings)
- 1/2 cup sliced apples - I used gala
- 1/2 cup sliced peaches
- 1/2 tbsp unsalted butter or ghee
- 1/8 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1 tsp honey
- 1/2 tsp brown sugar
- 1/3 cup corn flakes
- 1 tbsp roasted pumpkin seeds
- Place a pan on medium heat, add the unsalted butter
- Add the fruit and sprinkle some kosher salt
- Place a lid and let simmer for 2 minutes
- Add the ground cinnamon and brown sugar
- Optional: 1 tsp honey
- Place the lid back on, and simmer for 3-4 mins
- Into a dessert bowl or a tall cup, layer the following:
- Frosted flakes or corn flakes
- Sliced balances
- Add the caramelized fruit and drizzle 2 tbsp Irish Cream
- Sprinkle some toasted pumpkin seeds and some more corn flakes
Now eat this yumminess!!! You can also add a scoop for frozen yogurt or ice cream.. to go along. Or, a drizzle of melted chocolate - choices choices ;)
