Sauliflower is so rich in fiber and vitamin C that I always try and include it as much as possible. When you roast them with a spoonful of ghee and salt and pepper, they are just divine. Here's a neat way to make some for the whole family. Roast, and toss it in a salad for the grownups and blend for the picky eaters and mix with mac n cheese for the picky eaters! Everyone is happy!!
We all have those dishes that we just never ever will get tired of eating. This is one such dish that combined three of my favorite vegetables, cauliflower, bell peppers and potatoes (technically it's not a vegetable, but we will just group them together ;) )
This is my most favorite and most used spice in the kitchen. Why? Because it can be used in multiple cuisines, middle eastern, mexican, Indian, and sometimes, Chinese and American! Whoa, that's a bit ambitious, you might think? Absolutely not.
At my house, somehow color works! Get a white cauliflower over to my husband, and he would run away calling it cardboard (I love cauliflower in white / green / purple / any form!). However, somehow the purple cauliflower has a stronger taste and texture that just works for him. And so, this is an "approved" vegetable on the table and I don't need to hide it at all!
