Cold Soba Noodles with WunderEggs

Who doesn't love Asian style noodles with a hard-boiled egg? Well, today you can enjoy your favorite noodles with our vegan hard-boiled WunderEggs!
WunderEggs are the world's first whole food, plant-based and vegan hard-boiled eggs. WunderEggs are made with nuts and offer similar nutrition to chicken eggs. If you're a vegan who misses eggs, WunderEggs will absolutely blow your mind.

Ingredients: 

For noodle bowl

- 2 WunderEgg halves
- 1 packet cooked soba noodles
- 1/2 red cabbage thinly sliced
- 1 thinly sliced bell pepper red, yellow or green
- 2 carrots, shredded
- 1/2 cup fresh spinach
- Sesame seeds for topping
- Salt, to taste

For peanut dressing

- 1/4 cup peanut butter
- 2-3 tablespoons coconut aminos soy sauce substitute
- Juice of 1 key lime
- 1 teaspoon rice vinegar or apple cider
- 1 teaspoon sesame oil
- 1-2 tablespoons maple syrup or brown sugar or honey
- Red chili flakes, to taste
- 1-2 teaspoons grated ginger
- 2-3 tablespoons warm water add more if needed

    Instructions:

    1. Boil water and cook noodles according to the recommendations on the bag.
    2. Add salt to the water while cooking.
    3. Chop the veggies and place them in a large bowl.
    4. Prepare the dressing by whisking all the ingredients together or add them to a blender to combine.
    5. Skip the salt in the dressing or add if desired. Combine noodles, dressing, and vegetables. Add vegan WunderEggs.
    6. Top it sesame seeds.
    7. Let the salad rest for at least 10 mins.
    8. Serve at room temperature or as a cold salad.
