- 3/4 cup quinoa
- 2 slices of WunderEggs
- 1 cup spinach
- Handful of Cherry tomatoes
- 2 tbsp vegan pesto
- 1/2 avocado slices
- 1 jalapeno
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 tsp or more red pepper flakes
- Cook 3/4 cup of quinoa with 1 cup of salted water. Allow it to cool
- Saute spinach and tomato until tender. Set aside
- Assemble the bowl by adding cooked quinoa first and top it off with spinach, tomatoes, sliced avocados, and WunderEggs
- Add vegan pesto and sprinkle pepper and red pepper flakes to taste.
