Plant-Based Salmon Breakfast Bowl with WunderEggs

What a time to be alive when we officially have vegan options for salmon and hard-boiled eggs. And what better way to celebrate than a recipe that features both?

WunderEggs are ready-to-eat vegan hard-boiled eggs that are made from whole food ingredients like nuts. They offer similar nutrition to chicken eggs, minus the cholesterol.

Ingredients:

For the bowl

- 1 to 2 cups of cooked brown or white rice
- Handful of spinach
- 1 or 2 WunderEgg halves
- Save Da Sea Plant-Based Smoked Salmon, to taste
- 1/4 sliced avocado
- Diced tomatoes, to taste
- Sesame seeds, to taste
- Rice seasoning, optional


For creamy dill dressing

- 1/4 cup of vegan Greek yogurt
- 1 teaspoon of lemon juice
- 1 tablespoon of chopped fresh dill

    Mix all the ingredients together in a bowl and set aside. 

     Instructions: 

    1. Plate your bowl with cooked rice.
    2. Layer the spinach, tomatoes, avocado, WunderEggs and Plant-Based Smoked Salmon on top
    3.  Sprinkle sesame seeds and rice seasoning on top.
    4. Drizzle with dill dressing and enjoy!
